As the apples ripen and fall, it's difficult to find enough ideas of what to cook with them. Always room for an apple cake for tea or after a meal!
You can switch the apples for pears if these are in season and you have those...
Ingredients:
200g self raising flour
100g brown sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
150ml soy milk or other dairy free milk
75ml sunflower oil
1 1/2 teaspoon vanilla essence
1 tablespoon of cider vinegar
2 large apples for decorating the top
dairy free butter or stork to grease the baking tin
icing sugar to decorate
Instructions:
Preheat the oven to 180C, Gas Mark 4
Mix all the dry ingredients together in a large bowl, and then mix all the wet ingredients together in a jug. Add all the wet ingredients to the dry ingredients and mix together well using a mixer.
Grease a baking tin with dairy free butter or Stork. Line the tin with baking paper on the bottom.
Pour the batter into the tin and spread it all out evenly.
Peel the 2 apples, and slice each apple into 8 slices. Place the slices on top of the batter mixture, each one pointing out to the edge from the centre - like a star!
Bake in the oven for 35 minutes. Let it cool down and sprinkle with icing sugar before serving.
