Stacks of Gnocchi Canapes (Ve)

These are incredibly quick and easy to make and are a delicious nibble for a party or pre-dinner drink.




Ingredients

1 x 500g bag of fresh gnocchi

1 jar or pot of pitted brown or green olives (you need 40-50 olives)

Sun blushed tomatoes (again you need 40-50)

large handful of basil leaves


Preheat the oven to 220C or Gas Mark 7.


Tip the fresh gnocchi into a baking tray and coat with olive oil. Roast for 25-30 mins or until golden, shaking the tray occasionally to turn them.


Thread the roasted gnocchi onto cocktail sticks, followed by the olives, sun blushed tomatoes and basil leaves. Serve while the gnocchi are still warm.
