Ingredients:
1 yellow pepper
1 red pepper
2 green peppers
1 red onion
1 tablespoon sunflower oil
Serves 4-6
Instructions:
De-core the peppers, taking out the seeds. Slice the peppers length ways (from top to bottom). Peel and slice the onion. Mix the peppers and onion together, with the oil.
Place the peppers and onions in a roasting tray at 220 F or 200 F for fan assisted ovens. Roast for approximately 20 minutes, turning once whilst cooking. When softened take out and serve. You can cook these in advance and reheat in the oven before serving - but if re-heating transfer to an oven proof dish and put some tin foil over the top to stop them drying out.
