Here's a great vegan/vegetarian chilli that will spice up your Hallowe'en party! Really easy, and tastes great. Creates a scary impression when served with 'skull baked potatoes'.
Ingredients:
1 tablespoon oil
1 medium onion, finely chopped
1 red pepper, chopped
1 celery stalk, chopped
1 garlic clove, crushed
1 tablespoon chilli powder
2 teaspoon ground cumin
1/2 teaspoon cinnamon
1 can of chopped tomatoes
1 small pumpkin or large butternut squash, chopped into medium sized chunks
1 can of kidney beans
100ml vegetable stock or water (see Tips to ensure the vegetable stock is vegan friendly)
1 teaspoon salt and pepper to taste
Serves 4
Instructions:
In a cast iron casserole dish or saucepan, heat the oil and fry the onion over a gentle heat until translucent. Add the celery, pepper, garlic and spices and stir for a few minutes. Add the pumpkin or squash, the tomatoes, kidney beans, water and stir. Season. Leave to simmer for 40 minutes.
Serve with the scary skull baked potatoes.
If desired, top with grated cheese and sour cream or plant-based cheese or guacamole.
