Mid-week chilli is a 'go to' meal solution in our home - and being a mixed eating household, I have to find solutions for both vegans and traditional eaters. Last night I made a big chilli bean dish, and a chilli chicken dish alongside it. All served with rice and guacamole, and everyone was happy. I'm sure the traditional eaters here eat less meat and more veggies because there is a vegan alternative on the table as well. Even the tiny baby steps we take to reduce our household carbon footprint matter I think!
