Ingredients:
500g greek yogurt
½ cucumber
1 lemon
1 garlic clove
Large handful of fresh mint leaves
Salt to taste
Instructions:
Peel the cucumber and cut it in half lengthways. Use a knife of teaspoon to remove the seeds. Grate the cucumber into a bowl and mix in the yogurt. Pour in the juice of 1 squeezed lemon and a crushed clove of garlic. Finely chop the mint and mix together. Pour into a serving dish and chill until needed.
