This is a tasty but easy meal to make. Great for during the week or anytime really.
My advice is to cook the brown rice so that it's ready for the stuffing mixture first (or even in advance). I would make the stuffing mixture and then put the fish and the peppers into the oven at the same time so they can bake in the same oven for 20-25 minutes.

Sweet corn or another vegetable
