Refreshing, nutritious and light, this bean salad adds an extra dimension to a menu, and helps ensure that the vegans/vegetarians at the table have a balanced meal.
Ingredients:
1 x 400g mixed beans
1 tsp Dijon mustard
2 tbsp white wine vinegar
6 tbsp extra virgin olive oil
teaspoon of honey
tablespoon of chopped fresh basil leaves
Put the beans in a bowl. Mix all the remaining ingredients together in a jar - put the lid on and shake it well. Pour over the beans, and mix together well.
