250g/8oz yellow split peas

600ml/1 pint water approximately

1 teaspoon of salt

1/2 teaspoon of red chilli powder

1/4 teaspoon of ground turmeric

4 cloves of garlic, peeled

60g/2oz chopped fresh tomatoes

4 tablespoons oil

2 tablespoons chopped fresh coriander

1 teaspoon garam masala

Suitable for freezing.

Rinse the yellow split peas in 2 or 3 changes of water. Put the yellow split peas into a saucepan and add just enough water to cover the yellow split peas. Add the salt, chilli powder, turmeric, whole garlic cloves and tomatoes. Bring to the boil then simmer, covered, for 10 minutes or until the yellow split peas are cooked but still whole.

Divide the mixture into two. Put half into a food processor and 'whizz' until a loose paste.

Return to this paste to the pan. Mix together with a spoon. Sprinkle with fresh coriander and garam masala before serving.
