Ingredients
4 eating apples e.g. Granny Smith, Red Delicious, Gala
35g chopped walnuts
35g sultanas (optional)
1/4 cup light brown sugar, packed (make sure it is vegan-friendly sugar)
40g butter (or plant based 'butter' spread) softened at room temperature
1/2 teaspoon ground cinnamon
120ml water
Instructions
Preheat oven to 350F/180C/160 Fan.
Core the apples using a sharp knife or apple corer, and cut out a deep hole for the filling. Combine the brown sugar, butter (or plant based spread) and cinnamon in a small bowl and mix well to combine. Add the nuts and sultanas. Spoon the mixture equally into each of the apples.
Pour the water into the base of a baking dish and put the apples on top. Bake them for about about 40-45 minutes, or until the apples are tender when pierced with a fork. When you take them out of the oven, leave them to cool a little, then spoon any of the sauce from the base of the oven dish onto the apples.
Serve with cream, craime fraiche or icecream (optional).
