Pitta Bread

Obviously you can buy great pittas that would work well for this meal. But if you have the time, you could try making them yourself - they're worth the effort!


Ingredients:


250g of strong while flour

1 sachet of instant yeast (7g)

1 tsp salt

160ml water

1 dessert spoon of olive oil


Instructions:


Measure the flour into a bowl and add the yeast and salt and mix well. Gradually add the water and olive oil and mix. I like to do this with my hands, but you can use a fork. Alternatively, you can mix with a food processor. Once it is coming together into a ball, remove from the bowl and knew the dough for 10 minutes until springy. Place in a clean bowl and leave to prove until doubled in size.


Preheat oven to 250 degrees and place a baking tray inside to heat through.

Meanwhile, once the dough has doubled in size, turn it out of the bowl onto a floured surface and divide into 6 balls. Now using a rolling pin, roll each ball into an oval shape about 5mm thick.


Place the pittas on the hot baking baking tray and cook for 5-10 minutes until just turning golden( you may need to do it in batches). Wrap them in a tea towel to keep warm until serving.
