Ingredients:
Serves 4-6
6-7 chicken breasts, cut into bite sized pieces
1 tablespoon sunflower oil for frying
For the Fajita Spice Mix:
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon dried oregano
1 teaspoon sea salt
1/4 teaspoon fresh ground pepper
If you're short of time, you can use a packet mix for the seasoning - in my experience, the best one that is closest to the above recipe is the Santa Maria Medium Fajita Mix (28g) which is available from most supermarkets.
Instructions:
Mix the chicken pieces with the spices and oil. Put in a plastic freezer bag or box to marinate for a few hours. When ready to cook, heat the oil gently in a flat pan, and add the chicken pieces. Turn regularly on a gentle heat until cooked through. Serve.
